An Update....

Okay ya'll....I'm in move mode (I close the end of this week!). Please pray that all goes well with the closing and I can move in (I'm a worry wart, so I won't be less nervous until I sign on the dotted line...). But, I'll be back once I move in to my place. Until now, check this out:

Day 2 of No Diet Coke....

Well, the headache has subsided (FINALLY...it was awful last night!)...but I'm still feeling tired. Its amazing how dependent I'd become on that stuff...or maybe I'm just that tired and need a little break from work...haha! Here are last night's meals. Dinner is probably the meal where I get more variety, yet I realize I'm a total creature of habit. Breakfast and lunch really do look very similar each day...and its probably boring to blog about. So, I'm going to start posting my feasts when they change up a bit. Last night's dinner consisted of:

Chicken Sausage Pizza (I made this pizza using store bought crust, frozen peppers and onion blend, pizza sauce, 3 chicken sausages, and some shredded part-skim mozzarella). I love pizza and anyway I can create some slices, I certainly will!















I also had one of my coleslaw salads with Annie's ginger dressing.














And of course, chocolate heaven (I ate the first square before I could snap it)















Yum-o! Breakfast started out today the same ol' way: oat bran with sliced banana, almonds, and cinnamon; a yogurt; and hard boiled egg.










































Work is super fun this week...we've got a camp going on and its nice to get out of the office and enjoy the sunshine and drive a 15 passenger van! Have a great day!

Monday, Monday.....and my first challenge

Everyone loves Mondays, right? Well, usually I do, but that is due to the wonderful Diet Coke I open as soon as I get to work. Oh, how I look forward to that artificial, fizzy goodness.

But, I realize this habit isn't the healthiest. I recently went to get ice cream and was actually surprised about it didn't taste sweet at all to me...I actually wanted more sugar in it (yeah, weird I know!). I think that is because I'm used to super sweet artificial sweetners and not real sugar. That is odd for someone like me who professes to be such a healthy eater to drink so much of this stuff.

So, my first challenge is to actually give up my addiction to Diet Coke cold turkey!

I have a headache and feel very tired, but I know this is only temporary...at least, that is what I keep telling myself. Anyways, onto today's eats.....

breakfast was my usual....oat bran cooked with 1 cup of milk, a sliced banana, and a tablespoon of almonds. This was the first time I've experimented cooking oat bran with milk and its wayyyyy better than making it with water! Super creamy and kinda sweet too. I also had a hard boiled egg. I recently started eating these with breakfast and love how they really fill me up. So, I try to have one everyday...or if not, at least during the work week when I can't take breaks for food like I can on the weekends at home.



today's lunch was packed from home. I really try to bring my lunch everyday to save money. I packed ham and provolone, hummus, carrots, and a yogurt. The Nature Valley granola bar is my afternoon snack before my workout. Don't know what I'm going to do this afternoon for a workout...I'll do a dvd at home, but not sure what I'm in the mood for...any suggestions?

Does anyone else have an addiction to Diet Coke (or any soft drink for that matter)? How did you get rid of it and what do you drink instead?

Monster Weekend Post.....

Here is the food I snapped over the weekend. I had alot of fun working and hanging out with friends!

Friday's mid-morning yogurt and Diet Coke...
Friday's lunch didn't get snapped....I went out and forgot the camera! But, it was a Which Which sandwich (turkey on wheat with cheddar, mustard, lettuce, tomato, cucumber and a bag of Sun Chips with a Diet Coke).

Friday's afternoon snack...Kashi is one of my favorite brands ever!!!

Friday's dinner....a simple salad (coleslaw mix with Annie's gingerly vinaigrette) and Annie's mac and cheese mixed with peas, salsa, and canned chicken with 2 squares of Ghiradelli Twilight love...


Saturday's breakfast....I heart oat bran! Its my new fave thing to eat in the mornings! I had it with a banana and sliced almonds mixed in and a yogurt. This meal will look familiar, as I have it alot these days!


Saturday's lunch...I packed it before I went to work. I had a turkey and provolone cheese sandwich with hummus and carrots and an applesauce. I had a kashi TLC baked bar for snack in the middle of the afternoon! The hummus and applesauce got cut out of the picture....oops! My photography skills are lacking.


Saturday's dinner...the camera ate my pictures. I went to Rockaway's...a fab burger joint. I got the famous pimento cheeseburger and ate every delicious bite of it! I may or may not have split a basket of fries AND a basket of hush puppies with my burger....they were fantastic and so worth the splurge.

Sunday's breakfast...I tried to go back to the basics...once again, I called on oat bran to make it right (and to try to cleanse my body from the splurge the previous night). I wasn't hungry, but knew I needed to eat something....I mixed my bran with craisins and almonds and also had a yogurt (see, I told you I was a creature of habit)



Sunday's lunch...I still wasn't hungry, so I honored that. I just wanted something quick, so I had a banana with a tablespoon of peanut butter. Not the most balanced meal ever, but it hit the spot.Sunday's dinner got eaten by this camera as well... it was Moe's. Picture a salad....shredded lettuce topped with grilled chicken, grilled onions and peppers, salsa, and guacamole. I tried to make Mexican healthier...and I think I succeeded!

It was a busy weekend, but very good. Ever notice how weekends your eating is all out of whack? Late mornings, get togethers, etc...I'm still learning how to balance splurges with eating in moderation (whatever that means...I'm definitely an all or nothing type thinker and really trying to change that). I would love to splurge all of time, but its just not the healthiest thing to do!

Trying My Hand at this Blogging Thing....

I've wanted to blog for a while. Initially, it was to keep myself on track with my meals, but now I want to expand that and keep track of my life and goals too! I've gained so many wonderful food ideas and "friends" from reading these blogs and want to share my life with you. I love to exercise, eat, spin, shop, cook, etc but I want to do so much with my life I don't know where to begin. So, I'll start with the food intake and then expound from there!

My dinner last night consisted of whatever I could find in the freezer and fridge. I'm in the process of moving (just bought my first house!) and am trying to use up what I have so I won't have so much to lug over. It was also a tiring day (my first day teaching spin class after a two week long battle with a nasty sinus/ear infection), so I wanted something quick. That is a constant theme for my meals these days....simple and quick and healthy!


While my picture isn't great (still trying to work out the kinks), here's what I had: leftover coleslaw mix topped with Annie's Lite Gingerly Vinagrette, couscous (Near East Toasted Pine Nut) mixed with mixed veggies, and a Morningstar Farms tomato basil and pizza burger. It was simple, quick, and just what I needed!
I also had two squares of my favorite chocolate....I think I love it because it reminds me of my favorite movie.....and I already ate one before I remembered to snap it...oops...I really needed my chocolate fix!


Its Ghiradelli's Twilight Delight 72% Dark Chocolate. Recently, I've become a chocolate snob and love me some dark chocolate. I'd love to learn how to "taste" the chocolate and really distinguish the flavors....anyone have any suggestions on where I need to go?

Anyways, this morning I had something super quick: Two toasted kashi go lean blueberry waffles and a mixture of 1 mini box of raisins and 2 tbsp peanut butter. Simple, quick, and satisfying!
